Scharffen Berger. I took the tour and even produced a segment called "Chocolate Tech", back in the day for TechTV (if I can find it, I'll post it).
You can find this company's chocolate everywhere, and my only complaint is that they let Hershey buy them. I'm a little cloudy on what the business sale to Hershey really means, but Scharfenberger says it will not change the company.
This bar works for those who are taking baby steps toward dark chocolate. To me, a really good dark chocolate is around 75%. At 68%, this comes close but it's pretty mild for the hard core dark chocolate crowd.
It's smooth, and earthy to me - a good mild balance. It has a nice snap and a pleasant aftertaste. Tom says he it was fruity for him, with a hint of banana. Yes, we were tasting the same bar, but I guess our taste buds just didn't agree.
Overall, this bar is worth the hunt to find it. Plus, its green wrapper is pretty stylish too. You know, here's a link to purchase
